I've always called it brown sauce, and always called 'red sauce' tomato ketchup .

Brown sauce has a very tangy, fruity and spicy taste so nothing like tartar. Must be the vinegar.

aahh hp type sause makes sense i guess

is it like a thicker version of worcestershire type sauce? i think that one has fish sause in it for tang maybe?
