You should leave the yolks in, that's where all the iron and protein is. Don't worry about cholesterol unless you're a fat piece of shit anyway. The body naturally balances ingested cholesterol with its own production of it to reach an optimal level.
Raw eggs are good though, only way to get the lecithin in them (breaks down with heat.)
