I've seen that done, but it's not necessary. I kill them first before any cutting or skinning.

yeah, i didn't care to hang around and watch. i hate fishing anyway, unless it's saltwater.

usually yeah. fish continue to grow throughout their lives.
the best thing you can do for fish stocks are to keep the smaller ones and throw the big ones(the spawners)back.

Because of their bone structure, catfish arent fillade but rather cut into steaks. We had a catfish pond back home and I have caught 30 and 40 pounders. I used to eat them alot when I was growing up poor.
I've got some fillets in my freezer right now. Maybe it depends on the particular type of catfish.
