I own a Masakage Yuki 240mm Gyuto, they're handcrafted in Japan and every single one of their knives is sharpened by the same person before leaving their premises. It's insanely sharp, and rather beautiful

Turns out he used little shitty knives and had never considered how that might be unpractical. A few months later he did some stuff for our house, also being a carpenter, and i gave him a good knife as a thank you. He was so amazed at how great it was, funny stuff

I used to have a Global knife which was great but one day just snapped at the handle whilst I was using it and sliced my finger

Recently sharpened all our kitchen knives after probably close to 10 years of being used... god damnit is kitchening so much easier now when my knives can cut through basically anything with zero effort.
