Interesting. Tracking of Web and App activity is off, no location history whatsoever, no Device Information.
The only thing I have access to the history for is youtube activity and the profile it's built of me thinks I'm a 38-45 year old male with an interest in Banking and Android Apps (I don't watch videos that have anything to do with those things so I don't know what it's basing that off of)

It got my age range right but it also thinks I'm into Reggaeton? I do use uBlock (adblock) though.

I've got all of that tracking stuff turned off. Google has nothing on me. At least, nothing they're showing. I know better than that though.
