Here's a nerdy article that explains how Ubisoft worked out the details for how their in-game water looks and functions.
The tech behind (or beneath) the action
Assassin’s Creed III (ACIII) follows the story and path of Desmond Miles as he uses the Animus once again to relive the memories of his Assassin ancestors while fighting the Knight Templars. In ACIII the adventure extends for the first time to the ocean, unable to even swim in the first Ubisoft Assassin’s Creed, the gamer can now master entire sea battles. But the job of producing the fluid ‘stage’ on top of which the games action plays out, was no easy task.
It's got purdy pictures and videos that show the water system in action.

Damn, that's pretty cool. I saw a few things it was lacking, but maybe with the next iteration of the engine. For instance, I didn't see any breaking waves. And debris splashes seemed to stay stationary when waves went over them (on the z-axis?), making it look like they were floating back and forth. Kind of disorienting.

Those ships are faster than an ekranoplan.

yeah the ships are ridiculously fast even by modern standards. also i'm not sure even a full broadside would be enough to sink a ship in seconds

lol yeah and I'm pretty sure you can't go back in time and relive a dead relative's memories, but that seems to be ok...

Well, clearly they are taking artistic liberties. It's just a little surprising at first watching a wooden ship sail at Mach.
