How do I set up sub folders so I can better organise my mail?

you can't...
you can give mail tags based on rules, much the same as you can with outlook/eudora etc and then you can sort by these tags, but you can't actually section mail into different folders
...which is a little irritating

This is the same reason that I don't use Picasa for organizing pictures.

Pop a tag on the email then click 'archive.
When you want to view one of your 'folders' just input the tag name into search.
Same goes for picasa.
Offers much more flex than just folders. Cause now something can be 'friends and family' as well as 'ordering' or 'useful info'

My memory is foul. I don't want to be limited to 'search' in order to remember categories.

Setup a label for each group of emails you can create a filter to auto label everything if you wish.
Once you archive your items just click on the labels on the left pane to open only those emails.
