Are you speaking of the white flecks that fly out as the module seperates from the lander? Those are debris flying off as the two pieces seperated, not sparks.
Also, as the rocket engine took off, it expels gas to propel the module doesn't it? This gas could account for sparks, as could dust and other matter.
Plus, if I remember, many things in space 'burn' with no atmosphere. All you need are the raw elements or fuel, i.e. the Sun.
Of course I could be wrong...

You aren't serious about this, right? Who says sparks and flames can't exist in space? If you have materials that don't require oxygen to burn, you'll get flames (although it may be difficult to keep the temperature hot enough for a prolonged burn). And sparks are just pieces of hot debris that glow. Thus, blasting off from the moon would produce 1) flames from the fuel in the thrusters, which burn just fine, and 2) hot debris particles that will glow as they're thrown from the launch pad.

If someone was to seriously debate that the landing on the moon never happened, then that person would also have to be able to state why all responsible parties would want to make it a hoax. The principles of logic strongly favor that we did indeed land on the moon 35 years ago.

The luner modules all carried an oxidizer together with the propelent so that it could effectively burn and produce thrust!
The "sparks" you refer to is the gold leaf protective foil being blasted off. This is wrapped around the bottom half of the module (the part that is left behind on the moon) and is used to help insulate and protect the equipment from the 250 degree celcius heat from the sun.
