It probably doesn't have "flying sections", it's a GTA style game (read). Meaning you can enter a plane and fly across the map at high speed, with the game not looking like complete shit (better than GTA I suppose) and thus having high resolution textures, cars, buildings, people, bicylces etc. etc. to buffer at a certain speed to keep up with the player.
